
Goat’s Cheese, Spinach and Lentil Salad Recipe
The weather has been scorching here in the UK and when it’s this warm, your body craves lighter dishes. Try this summer salad, packed with protein and healthy fats as a light lunch. It’s quick and easy to make and tastes divine!
GOATS CHEESE, SPINACH & PUY LENTIL SALAD (Serves 2)
60g goats cheese, cut into chunks
½ cucumber, diced
2 large handfuls of spinach
Packet of cooked puy lentils
12 cherry tomatoes, halved
Put the spinach in a bowl, top with the lentils, then the cucumber, tomatoes and goats cheese on top. Split between 2 plates and serve. It’s that easy!
