
Grilled Lemon Chicken Recipe
Today has been a day of sunshine and inspired me to share one of my favourite recipes for this time of year. It’s a light summery dish perfect to have with a large salad.
Although a great source of protein, chicken can sometimes be a bit boring. This brings it back to life and is very moreish so you may want to make extra for lunch the next day!
GRILLED LEMON CHICKEN
[Makes 4 servings]
¼ cup coconut oil or olive oil
3 tablespoons garlic
1/3 cup freshly squeezed lemon juice
1 ½ teaspoons dried oregano
½ teaspoon dried thyme
1 teaspoon sea salt
½ teaspoon freshly ground black pepper
4 boneless, skinless chicken breasts
Method
- Combine oil, garlic, lemon juice, herbs, salt, and pepper in a large bowl.
- Transfer mix to a large plastic bag. Add the chicken breasts, and allow to marinate for 24 hours (or as long as you’ve got!).
- To cook, pre-heat the oven to 180° C and bake for 30 minutes or until juices run clear.
- Serve with a large green salad.
