Smoothie bowls are all the rage at the moment, and I have to admit to being a big fan. They are super quick and easy to put together, full of nutrient dense foods and feel really indulgent too. So a win all round! There are many options out there but the key thing to remember is not to add too much liquid otherwise it just gets all sloppy. Here’s one of my favourite recipes.
Raspberry Smoothie Bowl (Serves 1)
1 frozen banana
Cup of raspberries
Handful of fresh spinach
1/2 cup of almond milk (add more if neccessary)
Tbsp almond butter
For the topping:
Handful of granola
Tbsp coconut flakes
Tbsp chia seeds
Optional – Sprinkle of nuts of your choice or a serving of fruit
- Put the banana, raspberries, spinach, almond milk and almond butter in a blender or nutribullet and blend until smooth and creamy.
- Transfer into a bowl and top with the granola, coconut flakes, chia seeds and nuts or fruit.
